CREAM CHEESE GARLIC MASHED POTATOES

Another holiday favorite at my house is cream cheese garlic mashed potatoes. It’s a very simple recipe and is great any time of year. I started making these for my daughter when she was young, now she asks for these potatoes any time she’s home.

 

INGREDIENTS:

 

4 or five good sized baker potatoes

½ yellow onion (diced)

Heaping tablespoon garlic (fresh or minced in a jar)

½ or whole brick of cream cheese (depending of how creamy you want potatoes)

1-tablespoon granulated garlic

1-2 teaspoon garlic powder

1-teaspoon onion powder

½ teaspoon garlic salt

4-tablespoons butter

Salt and pepper to taste

sour cream (optional)

 

INSTRUCTIONS:

 

Cook the potatoes.

Peel and section potatoes in quarters and place in large pot. Dice a ½ yellow onion and add pot. Add two heaping tablespoons of minced garlic to the potatoes and onion. Add water to the pot, enough to cover potatoes onion and garlic. Bring water to a boil and let boil until potatoes are soft and break apart easily.

 

Drain water carefully from pot, remember the pot is HOT, and so is the water! I pour into a large colander to drain, shake it once or twice and place potatoes back into pot. Add butter, cream cheese and cover with lid for 10-minutes to allow butter to melt and cream cheese to soften. After cream cheese and butter has softened, add sour cream (optional), granulated garlic, garlic powder, onion powder, and garlic salt.

 

Using a potato masher OR a hand mixer, mash/mix potatoes just until all the ingredients are combined. There may be a few lumps… don’t over-mix.

 

Taste, add salt and pepper if needed. Serve and enjoy!
